Ingredients
4 cups zucchini, grated
6 eggs (at room temperature)
6 tbsp coconut oil, melted
3/4 cup apple sauce
2 1/4 cups almond meal
1/2 cup soy-free, dark chocolate chips
1/4 tsp baking powder
Instructions
Preheat oven to 325 F.
In a large bowl, whisk together eggs, coconut oil and applesauce.
In a separate bowl, combine the dry ingredients: almond meal, chocolate chips and baking powder. Mix well.
Slowly add the wet ingredients to the dry ingredients, stirring constantly.
Continue mixing and add the grated zucchini.
Pour the batter into a greased loaf pan.
Bake for 50 minutes.
